Below are a few cocktails that are now standards in most bars. These cocktails may not be on the list but if you’re in a cocktail bar, your bartender should know how to make them. The last martini works with savory ingredients to present a new direction in cocktail culture.

Martini – a drink mixed in history
60mls good gin/vodka

wave of Vermouth

Chill a Martini glass with ice and a lace of vermouth
Add 60mls of gin/vodka to a mixing glass filled with ice
Make garnish of olives/lemon peel
Stir or shake the ingredients of mixing glass until chilled
Empty Martini glass of melted contents leaving a little or almost no vermouth

Strain gin/vodka and add garnish

Margarita – made in 1948, Acapulco, Mexico by a Dallas socialite to please her guests.
45ml Agave Tequila

15mls Cointreau
Dash Lime/Lemon Juice
Splash Sugar Syrup
Salt

Shaken: straight up or on the rocks

Add all ingredients to an ice filled mixing glass
Rim glass in salt
Shake vigorously, taste and add s.s. as desired
Strain into salt rimmed glass
Add fresh/crushed ice for on the rocks

Blended: Add all ingredients to an ice filled bar blender

Blend, taste and add s.s. as desired
Serve in salt rimmed glass

Cuba Libre – literally meaning ‘free Cuba’ the drink has mysterious origins
45mls White rum
Lime wedges
Coke

Muddle 2-3 lime wedges in mixing or mojito glass

Top with ice, add white rum and shake
Serve in mojito or tall glass and top with coke
Add an extra lime wedge for garnish
Cosmopolitan – made famous by ‘Sex and the City’
45mls Vodka

15mls Cointreau
45mls Cranberry Juice
1-2 Lime wedges
Orange peel

Add sprits and lime squeezed into a mixing glass filled with ice

Shake and strain into a chilled large martini glass
Pour cranberry slowly over the back of a spoon on the edge of the glass to layer
Squeeze orange zest into cocktail, flip and float as garnish
Fruit Daiquiri – a fruity take on an all time classic
45mls Bacardi
10-15mls fruit liqueur or Cointreau
20-40 grams fresh or frozen fruit (a big spoon full or 2)
Dash of Lemon juice and a splash of Sugar Syrup

Add fruit then a big scoop of ice to the blender

Add sprits and sweet and sours
Blend till smooth, add ice to thicken and dilute
Taste and add S.S as necessary, some like it sweet or tart
Pour into large martini or other glass
Garnish with extra fruit if desired
Add 2 small straws for drinking and stirring
Mojito – enjoyed on beaches and in bars around the world
45mls white rum
3-6 lime wedges
Mint, 2-3 round mint or 3-5 long mint
Desired sugar
Sparkling Mineral Water

Muddle limes and mint with a good teaspoon of raw sugar

Top mixing or mojito glass with ice
Add white rum and a drop of sugar syrup and shake vigorously
Pour back into glass
Top with mineral water and garnish with a fresh Mint leaf or top sprig
Add 2 small straws for drinking and stirring

Caipirinha/Caipiroska – just add your favorite fruit for a great twist
4-8 lime wedges

Desired sugar
60mls white rum/vodka
Muddle lime wedges with a good spoon of raw sugar
Top mixing or mojito glass with ice
Add white rum/vodka and a drop of sugar syrup and shake vigorously
Pour back into glass
Top with crushed ice and garnish with extra fruit if desired
Add 2 small straws for drinking and stirring

Mezze Martini – created by Jeremy Thomas whilst having a martini comp with friends

45-60mls good gin
Olives
Roasted marinated capsicum (red peppers)
Red wine vinegar

Chill a large martini glass with ice and a lace of red wine vinegar

Add gin, and a large drop of olive brine to a mixing glass filled with ice
Prepare garnish of marinated capsicum and 2 olives on a half chopped skewer
Stir gin carefully in mixing glass for 30-60secs
Expel ice from large martini glass leaving some liquid/vinegar in glass
Add garnish and strain gin into martini glass
