Lo Fi (Collective) Cocktail Bar review

Martinez

Martinez – inspired the Martini

Heading to Lo Fi collective for several reasons, the promise of free Asahis was high on the list, the cycle track got us there in no time. Theres another reason Hugos Lounge has 3 staff in the upcoming cocktail competitions, not just as they’re the ‘in’ place.

Just here for a good time on a Sunday arvo to celebrate a birthday, the half price pizzas and cocktails were also a draw card. Straight into the cocktails perhaps our slightly rowdy bunch, headed . . . → Read More: Hugos Lounge Cocktail Bar review – ‘Your head is on fire!’

Arriving late due to a Mobile Cocktail Bar job executed with great success at the glasshouse in Pyrmont, me and the boys were thirsty for some down time. Vodka lemon, lime, bitters jelly with chef James Roberts

Vodka lemon lime bitters jelly

Chatting with my flatmate James Roberts (Hugos sous chef) we got onto the gelatine stored in our small pantry and decided it was time to put it to use. ‘What flavour jelly then?’ he asked. So browsing around the kitchen the fresh lemon and lime was available, we were adding vodka so bitters was an . . . → Read More: Vodka lemon, lime, bitters jelly with chef James Roberts

This recipe I give to thee, Dear brother in the heat. Take two of sour (lime let it be) To one and a half of sweet, Of Old Jamaica pour three strong, And add four parts of weak. Then mix and drink. I do no wrong–I know whereof I speak.

Dealing with the Cartwheels and Sillyba’s of this world…

The following is more of a rant about my experience dealing with people as opposed to a ‘be all and end all’ account.

Growing up in the then slightly dodgey Surry Hills quickly gave me a very good sense of what is right and wrong. Perhaps having a younger brother with Asberges (explaining to my single mum why . . . → Read More: Dealing with the Cartwheels and Sillyba’s of this world…

Mostly focused on the big wigs of the industry, from hotels and casinos to construction and mining industries, the expo didn’t provide much for the average punter or even the restaurateurs and hospitality types but it was still interesting to see what’s out there in regards to leading edge functional hospitality and design products.

A pirate walked into a bar, and the bartender said, “Hey, I haven’t seen you in a while. What happened? You look terrible.”

City of Sydney late night vision – Keep the small bars open longer please!

The City of Sydney is coming to understand the importance or nurturing late night dining and entertainment options for cultural and fiscal reasons. The introduction of the small bars bill by Clover Moore in 2007 finally gave hospitality entrepreneurs a chance to open a conceptual and unique venue and provided for some much needed indirect competition to the large pubs and clubs, some of whom have jumped . . . → Read More: City of Sydney late night vision – Keep the small bars open longer please!
